We are in love with this vegan poke bowl recipe with tofu, it’s quick, easy, and completely addicting!
As you probably know, poke is traditionally made with tuna or some kind of fish, but we’ll be using cubed organic tofu, which soaks up the sesame-ginger marinade and has a tender mouth feel. It’s healthy, filling, and tastes great!
Tofu poke bowls are perfect for a healthy lunch, dinner, and make-ahead meal, and can be whipped up in as little as 20 minutes!

Prep the produce: While the tofu poke is marinating, take your favorite Hamptons Brine raw probiotic sauerkraut out of the jar, cucumber, corn, carrot, radishes and whatever vegetables you have in hand. For variation, try adding: avocado, diced mango, or cubed pineapple chunks. The beauty of this Poke Bowl Recipe is that it’s totally customizable.

Cook the grain: Brown rice takes a little longer to cook than white rice, so be aware of that. Our rice cooker usually cooks it in about 40 minutes. You can also do this step ahead of time.
